Lobster BLT Salad
Rarely do we finish every last bit of a board by ourselves. Typically we either have friends over to share it with, or we have delicious leftovers for the next day. This particular board, however, was consumed in its entirety! Every bite was insanely delicious, and there was just no way to stop until it was all gone.
WHAT YOU NEED
Salad
Thick cut bacon
Steamed lobster (we used 1 lobster per person)
Butterhead lettuce
Meyer lemon, sliced and seeds removed
Heirloom tomatoes, yellow & red
Avocado
Red onion
Salt & fresh cracked pepper
Tarragon vinaigrette
1 bunch tarragon, leaves removed from stems
1 lemon, juiced
3 TBSP Dijon mustard
1-2 TBSP EVOO
1 TBSP honey
2 cloves garlic
DIRECTIONS
Wash and cut the tarragon, lettuce, avocados, tomatoes, onions and lemon and set to the side to dry.
If your lobster is not previously cooked, steam accordingly and carefully remove the shell from the claws and tails to keep the meat intact, while saving any other remaining lobster meat from the knuckles, legs, etc.
Cook the bacon in a pan, and save approx. 3 TBSP of the bacon grease in the pan. Throw in the sliced red onions, and toss for 1-2 minutes so the onions are still crispy, but have absorbed some of the grease. You can also cook the lemon slices in the same pan after the onions.
In a food processor, blend together the tarragon leaves, oil, EVOO, honey, Dijon mustard, garlic and lemon juice until smooth. Taste with a spoon and add salt and pepper accordingly.
Layer all of the items in a bowl or onto a board in the order of lettuce, tomatoes, avocado, lemon, bacon, lobster, onions, and dressing. Crack black pepper on top before serving.

Meyer Lemons - This is my first time cooking with these, and I will continue to do so as long as I can find them! They are a richer yellow color than a regular lemon, and are much more sweet than bitter. They have a sweet orange scent infused into the lemon smell, and they taste very flavorful. They also hold their texture and color very well when grilling!
Lobster - For anyone who lives in NYC, Sea Breeze Market on the corner of 40th & 9th Ave. is a wonderful resource for fresh seafood. They have fresh lobsters for $10.99/lb. or previously cooked lobsters for $13.99/ea. If you are located outside of NYC, Whole Foods always has a very fresh lobster selection - and sometimes very good sales too!
