Spring Rolls
Homemade spring rolls are the most colorful, refreshing, light yet delicious treat for a summer party! You can either prepare these in advance - or lay out all of the ingredients and let your guests pick the toppings and roll their own! Apart from the spring roll rice paper wrappers and vermicelli noodles (which you can find in most grocery stores) the ingredients are fresh fruits and vegetables, with the option of tofu, shrimp or chicken as the protein. These are most commonly served with a simple peanut dipping sauce (made with 6 parts peanut butter to 1 part each of hoisin, soy sauce, sriracha, garlic, warm water), or a chili mango sauce made by blending fresh mango, garlic and chili paste.

Red- Roasted Candy-Striped Beets, Radishes, Red Pepper
Orange- Orange Pepper, Carrots
Yellow- Fresh Mango
Green- Sugar Snap Peas (shells removed), Cucumber, Avocado, Jalapeno, Thai Basil, Shiso Leaves
Purple- Pea Flower Virmicelli Noodles, Cabbage, Purple Lettuce Leaves
White- Bean Sprouts
