TIP: When you buy the oysters from your local seafood market, make sure you are planning to use them within a few hours. Until the moment you are ready to shuck them, leave them in the refrigerator on a bed of ice, covered with a damp paper towel. When shucking, cover the hand you are using with a thick cloth or towel to prevent cutting yourself!
